You can see everyone who saw your Instagram Story because you posted it in Highlights. For 48 hours, you can only view the viewers and view counts; then, those elements are gone. Until you delete the highlights, you can still view them.
You can’t see how many times someone views your Instagram Highlights. View counts on Instagram only show who saw them, not how many times. Viewers of your Story could see it a million times without knowing. I think this is the best scenario.
